In Erzincan, wild garlic, known as a natural antibiotic, has taken its place on market stalls. Harvested as the snow melts and spring arrives, wild garlic stands out both for its health benefits and its potential as a source of income for the local people.
Growing naturally in mountainous areas, forests, and along stream banks, wild garlic is carefully cut from the roots by locals, placed in bags, and taken home. While some of the harvested garlic is used in cooking, the surplus is sold for 200 Turkish Lira per kilogram.
Also known as “gulik” in the region, wild garlic is used in dishes such as soups, flatbreads, and preserves. Street vendor İsa Kurt stated that wild garlic is particularly beneficial for those with intestinal problems and those wishing to lose weight, emphasizing its complete naturalness.
Citizens also use wild garlic in dishes like soups, stir-fries, pastries, and spinach, benefiting from the health advantages of this plant that grows naturally in the mountains. Authorities are highlighting the importance of naturally growing wild garlic (chiriş) for both health and the local economy. – ERZINCAN
